Ingredients

For the Burrito Filling:

  • 8 oz 225g chorizo sausage, casing removed
  • 6 large eggs beaten
  • 1 cup shredded cheese cheddar, Monterey Jack, or your favorite blend
  • 1 medium tomato diced
  • 1 avocado sliced
  • 1/4 cup chopped fresh cilantro optional
  • Salt and pepper to taste

For the Tortilla Wrap:

  • 4 large flour tortillas 10-12 inches
  • 2 tablespoons butter or oil for searing, optional

Instructions

Prepare the Chorizo:

  • Heat a skillet over medium heat. Add the chorizo and cook, breaking it into small pieces, until fully browned and cooked through (about 6-8 minutes). Transfer to a plate and set aside.

Scramble the Eggs:

  • In the same skillet, reduce heat to low. Add the beaten eggs and season with salt and pepper. Cook gently, stirring occasionally, until softly scrambled. Combine the eggs with the cooked chorizo.

Warm the Tortillas:

  • Heat the tortillas in a skillet or microwave until soft and pliable.

Assemble the Burritos:

  • Lay a tortilla flat on a clean surface. Add 1/4 of the chorizo-egg mixture to the center. Top with shredded cheese, diced tomatoes, avocado slices, and cilantro if using.

Fold the Burritos:

  • Fold the sides of the tortilla inwards, then roll it tightly from the bottom to form a burrito. Repeat with the remaining tortillas.

Optional Pan-Sear:

  • For a crispy finish, heat butter or oil in a skillet over medium heat. Place the burritos seam-side down and cook for 1-2 minutes on each side until golden brown.

Serve and Enjoy:

  • Serve warm with sour cream, salsa, or hot sauce on the side.
