Ingredients
3 to 4-pound venison roast (preferably from the loin or shoulder)
2 tablespoons olive oil
2 teaspoons garlic powder
2 teaspoons dried thyme
1 teaspoon smoked paprika
1 teaspoon kosher salt
1/2 teaspoon black pep
Instructions
Preheat your oven to 425°F (220°C).
Pat the venison roast dry with paper towels, then evenly coat it with olive oil.
Combine garlic powder, dried thyme, smoked paprika, salt, and pepper in a small bowl. Generously rub the seasoning mixture over the entire surface of the roast.
Place the seasoned roast in a shallow roasting pan or baking dish.
Roast the venison for 20-25 minutes per pound, monitoring the internal temperature with a meat thermometer. Aim for 130°F (55°C) for medium-rare or 140°F (60°C) for medium doneness.
Allow the roast to rest for 10-15 minutes after cooking before slicing and serving.
